Jason Gollan - Chef | Owner
Jason began working in the hospitality industry in 1990, washing dishes & then training as a baker & cook at a family-run restaurant in Boulder. He worked his way through his undergraduate degree at the University of Colorado, including two years as a Production Manager at the flagship bakery for Wild Oats Market, producing bread & pastries for retail stores throughout Colorado & New Mexico.
Jason's experience also includes professional training at the San Francisco Baking Institute, as well as a stint as a Production Bread Baker at Noe Valley Bakery. He also cooked professionally for ten years in fine dining restaurants in Boulder, Boston, & the San Francisco Bay Area.
In 2002, Jason & his wife created Crescent Bakery in Frankfort. They successfully owned & operated that business for five years, creating a full café menu, a comprehensive operations manual, & employing as many as 25 people during their busy summer season.
They live in downtown Traverse City with their two children, & can often be found walking their yellow lab around the neighborhood.
Diana Durren - General Manager
Since earning her undergraduate degree from The School of Hospitality Business at Michigan State University, Diana has spent her time managing large and diverse retail foodservice teams, driving annual revenues in excess of $7MM. Her work at venues as diverse as Munson Medical Center, Ford Field, the Lincoln Park Zoo, Northwestern University, and the 2008 Beijing Summer Olympics, has included concept creation and launch, team recruitment, training, and mentoring, purchasing, cost control and inventory management, as well as various HR and Marketing functions.
Diana and her husband live in downtown Traverse City with their daughter.
